But not just any pasta salad, it has chicken and grilled veggies and it is YUM! Just look at those giant chunks of avocado… drool. This is the absolute perfect summer-ish looking, pot luck-ish serving, savor-ish tasting meal.
Okay… you’ve been patient! Here it is, our Grilled Chicken, Veggie & Pasta Salad Bon Appetit Party Recipe
serves 8
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup lemon juice
1 cup olive oil
salt and pepper to taste
1 pound short cut pasta
1/2 cup diced red onion
2 colored peppers
2 avocados
1 medium zucchini
2 carrots
1 medium yellow squash
1 pint grape tomatoes
1/2 cup red wine vinegar
1 t dried oregano
Combine lemon juice, 1/2 cup of the olive oil and salt & pepper to taste. Pour over chicken and marinate for 1 to 24 hours. Grill for 7 minutes per side. Let rest for 10 minutes. When cool, slice across the breasts into 6-8 slices then cut into cubes.
Cook the pasta according to the directions on package. Drain and allow to cool.
Cut the peppers into quarters and grill until lightly charred. When cool cut into thin strips.
Cut zucchini and yellow squash in half lengthwise and grill skin side up until lightly charred. When cool cut into half-moons.
Peel carrots, cut in half lengthwise and grill until lightly charred. When cool cut into half-moons.
Peel and cut avocado into cubes.
Dice the red onion.
Add everything except the chicken to the pasta.
For the Dressing:
Whisk the wine vinegar, the rest of the olive oil, oregano and salt and pepper to taste.
Toss the pasta salad ingredients with enough dressing to coat. You may have extra dressing. Mix in the chicken and chill at least one hour or overnight.
